Description

Thai Larb Meatball Lettuce Wraps are a flavor-packed dish easy to make for a weeknight dinner if you are in the mood for some Thai Issan homemade food!

Ingredients

Scale
  • 1 cup cilantro coarsely chopped
  • 1 cup green onion, cut into 1 inch-ish pieces
  • 1/2 cup mint leaves
  • 1 shallot, coarsely chopped
  • 1/3 cup lime juice
  • 2 tbsp fish sauce
  • 1 tbsp roasted rice powder
  • 1/21 tsp roasted Thai chili flakes, to taste
  • 1 tbsp tapioca flour
  • 1/2 cup panko bread crumbs
  • 1.25 lb ground turkey or ground beef or any ground meat you love
  • Lettuce of your choice, I love bib lettuce!

Instructions

  1. Add the cilantro, green onions, mint leaves, and shallot to a food processor.
  2. Process until finely chopped. You don’t want big chunks of the herbs or cilantro stems in your meatballs, so once it looks good to you, add to a mixing bowl.
  3. Add in the lime juice, fish sauce, roasted rice powder, chili flakes, tapioca flour, panko bread crumbs and ground meat.
  4. Combine until just mixed.
  5. Form into meatballs and place on a large baking sheet, or two cookie sheets.
  6. Broil for 15 minutes, or until crispy looking on top and cooked through.
  7. Eat with jasmine rice, and lettuce and enjoy!
