Description

Lemony lemongrass, spicy Thai chilis, crisp red onion, ginger kick, cool kale, fresh cilantro and of course a little garlic and fish sauce…and canned tuna. Thai tuna salad is the best tuna salad you’ve ever had!


Ingredients

Thai Tuna Salad Dressing

  • 2 tbsp lemongrass, finely chopped
  • 3 garlic cloves minced
  • 2 fresh Thai chili peppers, finely chopped (more or less peppers depending on spicy tolerance)
  • 2 tbsp ginger paste
  • 3 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1/4 cup lime juice

Thai Tuna Salad

  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cilantro, coarsely chopped stems and leaves
  • 1/4 cup green onions, chopped into 1/4 inch pieces
  • 1 cup cherry tomatoes, sliced
  • 3 cups fresh power greens
  • 12oz can of your favorite tuna, drained

Instructions

  1. Add Thai Tuna Salad dressing ingredients to a small pan over medium heat.
  2. Stir until the sugar dissolves, probably 30 seconds or so.
  3. Add the Thai Tuna Salad ingredients to a bowl, and mix until well combined, right before serving.
  4. We like to eat it Thai-Style alongside jasmine rice and other delicious Thai dishes, but it’s also good on it’s own for lunch!
