Lemony lemongrass, spicy Thai chilis, crisp red onion, ginger kick, cool kale, fresh cilantro and of course a little garlic and fish sauce…and canned tuna. Thai tuna salad is the best tuna salad you’ve ever had!

Thai Tuna Salad Dressing
- 2 tbsp lemongrass, finely chopped
- 3 garlic cloves minced
- 2 fresh Thai chili peppers, finely chopped (more or less peppers depending on spicy tolerance)
- 2 tbsp ginger paste
- 3 tbsp fish sauce
- 2 tbsp brown sugar
- 1/4 cup lime juice
Thai Tuna Salad
- 1/4 cup red onion, thinly sliced
- 1/2 cup cilantro, coarsely chopped stems and leaves
- 1/4 cup green onions, chopped into 1/4 inch pieces
- 1 cup cherry tomatoes, sliced
- 3 cups fresh power greens
- 12oz can of your favorite tuna, drained
Instructions
- Add Thai Tuna Salad dressing ingredients to a small pan over medium heat.
- Stir until the sugar dissolves, probably 30 seconds or so.
- Add the Thai Tuna Salad ingredients to a bowl, and mix until well combined, right before serving.
- We like to eat it Thai-Style alongside jasmine rice and other delicious Thai dishes, but it’s also good on it’s own for lunch!
