I’m sipping the last of my Thai tea that was in my fridge (don’t tell my kids because they would fight me for it!) It’s sooo good on a summery day I couldn’t resist!
I’m so glad to be back, and so sorry dear friends that I dropped off the face of the planet for awhile.
The last year has been a crazy season trying to get ready for our baby #4, and adjust to life in our new home in Boone, NC. But now Baby Lucca is here, Boone feels like home, and I’m ready to share Thai recipes again! Yay!
But before I get into that I wanted to share what we’ve been up to the last few months.
Lucca Matthew Pengjad
My 6-year-old son’s dream was to have a baby brother, and he knew without a doubt that he was going to have one. My dream was that he wouldn’t be disappointed if we ended up having a girl instead!
We had a fun gender reveal party and with screams of joy from my Thai Hubby and I, we discovered Rocco’s dream came true! We were going to have a baby boy! Rocco wasn’t too impressed with the party since he knew it was a boy anyways and wasn’t sure what the fuss was all about.
Lucca Matthew Pengjad arrived on January 24th at 6:20am. He was my quickest labor and delivery out of my four kiddos, only 4 hours! I guess he wanted his labor time to match his birth order, and I didn’t mind a bit!
We are all obsessed with him, and he is constantly being smothered in love and held and tickled, and in my 2-year-old’s case, tackled, since she loves him a little too fiercely most of the time and doesn’t know how to control her love yet. Lol!
Life in Boone, NC
We moved from Austin, TX a year ago to Boone, NC. We’ve missed our friends, swimming every day in the summer, breakfast tacos, and having an Asian store only 20 minutes away, but other than that we’ve been utterly delighted with life in the mountains of NC!
We love having our family closer, our log cabin, our creek, the space for our kids to run and ride bikes, hiking in the Great Smoky mountains and having a close-knit community where we quickly felt like we belonged.
The one downside is not having an Asian store nearby. Whenever we go to visit my family, who lives in the Charlotte area 2.5 hours away, we always stop at the Asian grocery store since that’s the closest one to us and fill up with all the good quality coconut milk, wet tamarind, Thai chili paste, Thai curry pastes, lemongrass, galangal, kaffir lime leaves, Thai soy sauces, fresh noodles and all the Asian snacks that our car can possibly hold.
Can someone please open an H Mart (my favorite Asian grocery store) in Boone, NC please?? Anyone with me?
My goal is also to start doing Thai Cooking Classes at our place in Boone!!! so if you are interested in seeing the NC mountains and taking a Thai cooking class, let me know, and I will schedule you in 🙂
